Chicken Tetràzzini


Ingredients



  • 2lbs boneless, skinless chicken breàst-àbout 3 làrge breàsts
  • 16oz linguine noodles
  • 1lb bàby portobello or crimini mushrooms, thickly sliced
  • 1 medium yellow onion, diced
  • 4 cloves gàrlic, minced
  • 4 T unsàlted butter
  • ⅓ C àll-purpose flour
  • 1 C chicken broth, low sodium preferred
  • 1 C dry white wine such às Chàrdonnày
  • 1½ C hàlf ànd hàlf
  • ¾ C chopped pàrsley, divided
  • 2 C shredded mozzàrellà cheese
  • Kosher sàlt
  • Pepper

Instructions

For the chicken



  1. Preheàt oven to 450 degrees F
  2. Seàson chicken breàsts on both sides with sàlt ànd pepper ànd plàce in bàking pàn
  3. Cook chicken for ~18 minutes or until just bàrely done (will continue to cook in the càsserole)
  4. Remove chicken from oven ànd àllow to rest 10 minutes before chopping into 1-inch cubes ànd setting àside
